Intensive Summer Course - June 2022

During the month of June, Italian Cuisine organizes an Intensive Summer Course for Food Lovers designed for people wanting to improve their knowledge: 3 weeks dedicated to the origins of Lucca and Tuscan Cuisine up to the trends of modern cuisine. The cooking lessons will be held by the Director and Executive Chef Gianluca Pardini, Chef Francesco Martinelli and Guest Chefs.

The course is addressed to cooking lovers and foreigners who would like to improve their knowledges about cuisine in a professional and, in the meanwhile, funny atmosphere.

During the 3 modules will be scheduled trips around Lucca in order to discover the beauties of our territory and know the km0 products. The planned visits are the following: Monica Ferrucci's Dairy at "Podere al Carli", to "La Badiola" Winery and to "Fabbrica di San Martino" Agri Farm.

LESSONS

Courses will take place in June with classroom lessons from Monday to Friday, 5 – 8 pm. During each lesson, the student will prepare a complete 4-course menu, which will be served at the table for dinner. All lessons are actively participatory

Each week the lessons will be focused on specific topics: it is possible to attend one cooking class, one module/week or the full course.

TOPICS OF THE LESSONS

- Fresh Pasta, with explanation of the types of flour

- Bakery, with explanation of the types of flour

- Meat and slaughter

- Fish, cleaning and preparation

- The vegetables and field herbs and their use in the kitchen

- Lucca Cuisine: soups, tortelli and our herbs

- Tuscan Cuisine: meats, legumes and our flours

- Ligurian Cuisine: fresh fish and the scents of the territory

- A lesson dedicated to local wines and the correct pairing with food

Time: to be confirmed: it will depend on the requests and availability 

Minimum of participants: 6; Maximum: 10.

The booking is mandatory.

Cost of the full Course – 3 weeks of Cooking Lessons: € 975,00 (VAT included) – 45 hours of cooking lessons, recipes, hats and aprons disposable, dinner.

Cost of the full Course with trips: € 1125,00 (VAT included) – 45 hours of cooking lessons, recipes, hats and aprons disposable, dinner.

Cost of 1 week / 1 modul: € 375,00 (VAT included) – 15 hours of cooking lesson, recipes, hats and aprons disposable, dinner.

Cost of 1 lesson: € 75,00 - (VAT included) – cooking lesson, recipes, hats and aprons disposable, dinner.

It’s possible to have a tailor made uniform: € 40,00 (VAT included)

PAYMENT: by bank transfer, in cash or by debit card, 30% to be paid upon enrollment, and the 70% by the end of the first week of the course.
