Ingredients for about 4 people :
500g of flour; 200ml cold water; 1/2 spoonful of oil; 1 pinch of salt
For the sauce:
500g (17 oz.) of broccoli shortly boiled in water; 3 slightly crushed cloves of garlic; 3 anchovy fillets
150g (5 oz) of “rigatino” cut into thin slices; 50g (2 oz.) of rough crumbs fried in olive oil; 100 cl of extra virgin olive oil; hot pepper
For the sauce: sauté garlic and hot pepper in oil, add anchovies and let them melt.
Add broccoli, previously boiled in water for a while and roughly chopped.
In another pan fry “rigatino”, then add it to broccoli.
Stew until vegetables are nice and soft.
For pasta: make a dough using all ingredients. Let rest for about 30 minutes and prepare pici.
Boil pici in the same water where you boiled broccoli, drain and season with the sauce.
In the end add fried bread crumbs, as you would do with parmesan cheese.
